Ingredients
 Melted butter, to grease
 250g butter, at room temperature
 100g (1/2 cup) caster sugar
 300g (2 cups) plain flour, sifted
 90g (1/2 cup) rice flour, sifted
Step 1
Preheat oven to 150°C. Brush 2 baking trays with melted butter to grease. Use an electric beater to beat the butter and sugar in a bowl until pale and creamy.
Step 2
Gradually add the combined flour, beating on low speed until almost combined. Use your hands to bring the dough together in the bowl. Turn onto a lightly floured surface and knead gently until smooth.
Step 3
Divide the dough into 2 equal portions. Use your hands to shape 1 portion of dough into an 18cm-diameter disc. Transfer to 1 of the prepared trays. Use a flat-bladed knife to smooth the surface. Pinch the edges to create a fluted edge. Use a small sharp knife to score the disc into 8 wedges and use a fork to prick the dough all over. Repeat with the remaining dough to make a second disc.
Step 4
Bake the shortbread in oven, swapping the trays halfway through cooking, for 40 minutes or until light golden. Set aside on the trays for 10 minutes to cool before transferring to a wire rack to cool completely. Cut into wedges to serve.
Probably the best shortbread recipe I have made. Crisp but melted in your mouth and great taste. Made it on a really hot day (37 degrees) so I pre measured the flours and left in the freezer while the butter came to room temperature. Used the butter as soon as it was soft enough to slice easily. Mixture was moister than many other shortbreads I've made but came together ok. Made two rounds but would cut them each into more than eight pieces next time as they were quite large pieces.
I really didn't like this recipe. Easy to make but did not taste nice at all. I tried it twice and yeah just wasn't nice!
This is my go-to recipe for shortbread at Christmas, I've made it several years running now and it has turned out perfectly every time. Rich and buttery and just melts in your mouth. I don't bother with the rounds, just press it into a greased slice tin (takes a little longer to bake this way because it's thicker), and slice it into rectangles. Sometimes I like to add a tsp of vanilla extract while beating the butter and sugar, and usually some caster sugar sprinkled over the top before baking.
Great recipe basic, but i love to use wholemeal flour instead of plain, as it gives it a more earthy, homely feeling!
Ingredients
 60g (1/4 cup) demerara sugar
 1 tablespoon fresh lime juice
 1 x 7cm cinnamon stick
 2 teaspoons fennel seeds
 410ml (1 2/3 cups) water
 50g butter
 150g (1 cup) plain flour
 Pinch of salt
 1 teaspoon vanilla essence
 4 eggs, lightly whisked
 100g (1/2 cup) caster sugar
 1 teaspoon ground cinnamon
 Canola oil, to deep-fry
Method
Step 1
Place, demerara sugar, lime juice, cinnamon, fennel seeds and 160ml (2/3 cup) water in a small saucepan over medium-low heat. Stir until the sugar dissolves. Increase heat to high and bring to the boil. Reduce heat to medium. Cook for 10 minutes or until the syrup thickens slightly. Transfer to a heatproof bowl. Set aside to cool. Strain through a fine sieve into a serving jug.
Step 2
Meanwhile, place the butter and remaining water in a medium saucepan over medium-high heat. Bring to the boil. Remove from heat. Stir in the flour and salt. Place over low heat and cook, stirring, for 1-2 minutes or until the mixture forms a ball and begins to come away from the side of the pan. Stir in the vanilla. Use a balloon whisk to whisk in the egg, then use a wooden spoon to beat until well combined.
Step 3
Combine the caster sugar and cinnamon on a plate. Add enough oil to a large saucepan to reach a depth of 5cm. Heat to 180°C over medium-high heat (when oil is ready a cube of bread will turn golden brown in 15 seconds).
Step 4
Use 2 metal teaspoons to shape 1 heaped teaspoonful of the dough into a ball, about 3cm wide. Repeat to make 3-4 balls. Carefully place the balls in the oil. Cook, turning occasionally with a slotted spoon, for 3 minutes or until golden and cooked through. Use a slotted spoon to transfer to a tray lined with paper towel. Set aside for 2 minutes to drain and cool slightly.Toss the warm doughnuts in the cinnamon sugar to evenly coat.Repeat in 5 more batches,with the remaining dough,reheating the oil between batches.Serve warm with the syrup.
