3/4 cup (1-1/2 sticks) unsalted butter, softened
1/4 cup unsifted confectioners' sugar
1/3 cup sugar
1 teaspoon vanilla extract
1/3 cup yellow cornmeal
1-3/4 cups all-purpose flour
1/4 teaspoon salt
confectioners' sugar, for finishing cookies
Adjust rack to lower third of oven and preheat oven to 350 degrees F. Cream the butter, sugars, and vanilla until smooth. In a separate bowl, mix together the cornmeal, flour, and salt. Combine dry ingredients with butter mixture to form a soft dough. Shape into 1-inch balls (using about 1-1/2 teaspoonfuls of dough per cookie), and space about 1-1/2 inches apart on large, parchment-lined baking sheets. Bake for 12 to 15 minutes, or until bottoms are lightly colored. While cookies are still warm on the baking sheets, sprinkle them with confectioners' sugar through a small sieve. When thoroughly cool, dredge them in confectioners' sugar for a second coating
Easy snowball cookies
Love these 'Snowball cookies' ...they are always an easy add...and everyone always loves them...ty :)
1 cup butter, creamed
1 cup brown sugar
3 eggs, beaten
3 cups flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1 cup chopped raisins
1/2 cup currants
1 cup chopped dates
1/2 cup coconut
Preheat oven to 400 degrees F. Combine butter, sugar, and eggs and beat until light. In separate bowl sift together dry ingredients, add fruit, and mix well. Add butter mixture and stir into a stiff dough. Drop by spoonfuls onto cookie sheet, flatten, and bake for about 15 minutes.

2 Packets of Duncan Hines Devil
4 Eggs
2/3 Cup Oil
Frosting
1/4 Cup Butter
2 Cups Icing Sugar
1/2 Package of Cream Cheese
Method
Combine all the cookie ingredients in a super-large bowl and mix by hand until it forms a dough ball.
Roll into 1" balls, and bake on ungreased sheets at 375 degrees for 8 minutes on a rack in the middle of the oven.
Remove the cookies from the oven, and drop the cookies about 12" onto the counter (this flattens them)
Allow the flattened cookies to cool on the tray. When the cookies are cool, frost with the cream cheese icing.
Icing
Blend the butter, sugar and cream cheese well. If the mixture is thin, chill for a bit.
Sandwich the cookies together with this icing mixture.
