Ingredients:
1 (18 1/4 ounce) box devil's food cake mix (Betty Crocker Super Moist suggested)
1/2 cup vegetable oil
2 large eggs
confectioners' sugar or granulated sugar, for rolling
Directions:

Preheat oven to 350°.

Stir (by hand) dry cake mix, oil and eggs in a large bowl until dough forms.

Dust hands with confectioners' sugar and shape dough into 1" balls.

Roll balls in confectioners' sugar and place 2 inches apart on ungreased cookie sheets.

Bake for 8-10 minutes or until center is JUST SET.

Remove from pans after a minute or so and cool on wire racks.
I have always had trouble making the usual Chocolate Crinkles - they always turned out crunchy! These are so easy - I have made them three times for Christmas already and will probably make more today. I do chill the dough which makes them a little easier to work with. Great recipe!
A super easy and fast recipe. I had a bit of trouble getting the cookies to "set" -- a few passes back through the oven did the trick. I recommend a beginning bake time of no less than 12 minutes. Also, really dredge the cookie balls in the sugar ... much is absorbed during baking, which leaves the cookies with only a minimum of white powdered coating. I plan on decreasing the oil to 1/4 cup to see if this helps stop the powdered sugar from "disappearing."

INGREDIENTS
1 cup (2 sticks) unsalted butter, plus more for baking sheets
3/4 cup corn kernels
2 tablespoons plus 1 1/2 teaspoons canola oil
2 cups raw almonds
2 cups packed light-brown sugar
1/2 cup light corn syrup
2 teaspoons pure vanilla extract
1/2 teaspoon pure almond extract
3/4 teaspoon salt
1/2 teaspoon baking soda
DIRECTIONS
Preheat oven to 250 degrees. Butter 2 rimmed baking sheets; set aside. Place corn kernels and oil in a large pot over medium-high heat; cover. Once kernels begin to pop, shake pot frequently; when popping slows to about 3 seconds between pops, remove from heat; uncover. Transfer to a large bowl. Add almonds; toss.
Cook sugar, butter, and corn syrup in a medium saucepan over medium-high heat, stirring, until it reaches 255 degrees.
Remove from heat. Stir in extracts, salt, and baking soda. Pour over popcorn mixture; toss to coat. Divide between prepared sheets. Bake, stirring occasionally, 1 hour 20 minutes. Let cool on wire racks.

1 medium onion
2 sticks of celery
1 medium leek
2 cloves of garlic
olive oil
3 medium potatoes
2 courgettes
sea salt
freshly ground black pepper
1 organic vegetable stock cube, or 1.4 litres hot fresh vegetable stock
100 g podded fresh peas, or broad beans
200 g baby spinach
a few sprigs of fresh mint
1. Peel and roughly chop the onion on a chopping board, then place in a large bowl.
2. Trim and roughly chop the celery and leek (make sure you wash it really well) and add to the onion.
3. Peel and finely chop the garlic cloves and add to the bowl of chopped vegetables.
4. Place a large pot on a medium heat and add 2 tablespoons of olive oil.
5. Once hot, add all the chopped vegetables, turn the heat down to low and cook with the lid askew for 10 to 15 minutes, or until tender, stirring occasionally. Meanwhile…
6. Peel the potatoes using a Y-shaped peeler, then chop into rough 2cm chunks and place in the empty bowl.
7. Chop the courgettes into rough 2cm chunks and place in the bowl with the potatoes.
8. Fill and boil the kettle.
9. Once the vegetables are cooked, add the potatoes, courgettes and a tiny pinch of salt and pepper.
10. Crumble the stock cube (if using) into a measuring jug and carefully top up to 1.4 litres with boiling water and stir until dissolved.
11. Carefully pour the hot stock into the pot.
12. Turn the heat up to high and bring to the boil, then reduce the heat to medium-low and cook for 15 to 20 minutes or until the potato is cooked through.
13. Add the peas or beans and the spinach and cook for a further 4 minutes, or until the peas are tender.
14. Carefully remove the pot to a heatproof surface and leave for a minute or two to stop bubbling.
15. Carefully blitz with a stick blender until smooth (use a tea towel to protect your hands from little splashes).
16. Have a taste and add a tiny pinch of salt and pepper if you think it needs it.
17. Pick and roughly chop the mint leaves, discarding the stalks.
18. Carefully ladle the soup into bowls and sprinkle over the mint – it's delicious served with homemade croutons.
6 rashers higher-welfare smoked streaky bacon, chopped
2 red onions, peeled and chopped
2 carrots, scrubbed and chopped
3 sticks celery, trimmed and chopped
2 cloves garlic, peeled and sliced
a few sprigs fresh flat-leaf parsley, chopped
olive oil
½ teaspoon dried thyme
½ dried chilli, crumbled
200 g dried lentils, a mixture of green and red
1 organic vegetable stock cube, optional
410 g tinned cannellini beans, drained
extra virgin olive oil
Place a large saucepan (with a lid) on a medium heat. Add a lug of olive oil and the bacon. Fry slowly until the bacon has started to release all its tasty fat and goes crispy, then add the dried thyme, dried chilli, onion, carrot, celery and garlic.
Cook gently with the lid on for about 15 minutes, until all the vegetables are soft, then add the lentils and 1 litre water or vegetable stock. Bring to the boil and simmer until the lentils are soft. (Check the packet instructions as different types of lentils vary in cooking time. If you're mixing your lentils, cook for the longest amount of time to make sure they are all cooked properly).
Add the tin of cannellini beans and, if the soup's a little thick, some more water. Bring back to the boil and simmer for another 10 minutes, then taste and season with sea salt and freshly ground black pepper.
Ladle into bowls and finish with a drizzle of extra virgin olive oil and the chopped parsley. Serve with hunks of bread.

Ingredients
 30g unsalted butter
 1/4 cup (35g) plain flour
 1 cup (250ml) Campbell's Real Stock Chicken
 1/4 cup (60ml) dry white wine
 1/2 cup (125ml) thickened cream
 2 cups (320g) chopped cooked turkey
 1/2 cup (90g) chopped leg ham
 10g dried porcini mushrooms (see note), soaked in boiling water for 10 minutes, chopped
 2 tablespoons chopped flat-leaf parsley
 2 tablespoons chopped chives
 2 spring onions, finely chopped
 375g block frozen puff pastry, thawed
 1 egg yolk, beaten
 Cranberry sauce, to serve
Method
Step 1
Preheat the oven to 180°C. Line a baking tray with baking paper.
Step 2
Melt the butter in a saucepan over low heat. Add the flour and cook, stirring constantly, for 1 minute or until mixture bubbles. Add chicken stock and wine, then cook for a further 2-3 minutes, whisking to remove any lumps. Add the thickened cream and cook for a further minute or until the mixture boils and thickens. Season to taste, then stir in the turkey, ham, chopped porcini, parsley, chives and spring onion. Remove from the heat and allow to cool completely.
Step 3
Meanwhile, roll out the pastry on a lightly floured surface to form a 30cm x 33cm rectangle. Cut in half lengthways to give two 15cm-wide pieces. Place one pastry sheet on the lined baking tray and spread with the cooled turkey mixture, leaving a 2cm border.
Step 4
Fold remaining sheet of pastry in half lengthways and use a sharp knife to make cuts in the folded side, about 1cm apart and leaving a 2cm border on the unfolded side. Carefully open the pastry back out and place over the filling, pressing the edges to seal. Trim the edges if necessary, then brush all over with the beaten egg.
Step 5
Bake the pie for 25-30 minutes until puffed and golden. Slice the pie and serve with cranberry sauce.
Delicious way to use up any leftover Christmas turkey and ham. Works well with low fat ready rolled puff pastry.
Gotta love a meal made of leftovers that becomes the star attraction. Family raved and requested that I add this to my repertoire. Thank you ...not a slice left.
What a fabulous leftovers meal. Our Turkey was a bit dry so having it in the pie made it oh so much better. This one will get pulled out every year from now on.
My kids loved it, even my son who hates mushrooms. A great idea for Christmas left overs. I've also used this recipe for left over roast chicken.
roux(to thicken)
25g (1oz) butter
25g(1oz) plain flour
For the filling
50g (2oz)Avonmore butter
200g(7oz) mushrooms, sliced
1 leek, sliced
salt and pepper
800mls(1.5 pints) chicken/turkey/vegetable stock
200mls (7floz) cream
10 fresh sage leaves, finely chopped
sprig of fresh thyme
2 teasp wholegrain mustard
100g(4oz) frozen peas
500g(16oz) cooked turkey
250g(8oz) cooked ham
For the topping
400g(14oz) puff pastry rolled to 5mm thick
1 egg, beaten, to glaze
or
1.5kg(3.5lbs) mashed potatoes
Preheat the oven to 200°C/400°f/gas 6. First make the roux by melting the butter in a small saucepan over a gentle heat. Add the flour and continue to stir for 2 minutes until the mixture comes away from the saucepan. Pour into a bowl and leave to one side.
Add half the butter to a large oven proof dish or saucepan and over a high heat fry the mushrooms for 4 minutes until soft. Remove to a plate.
Add the rest of the butter and add in the sliced leeks. Season with salt and pepper. Saute for about 15 minutes until soft but not coloured. Once cooked add to the mushrooms on the plate.
Using the same saucepan add the stock, cream, sage, thyme leaves and wholegrain mustard.
Bring to a boil, then whisk in the roux. The liquid must be boiling while you add the roux for the sauce to thicken without getting lumpy.
Return the cooked mushrooms and leeks to the saucepan. Add the peas, turkey and ham.
Either top with the puff pastry and glaze with some beaten egg or top with mashed potatoes.
Place the dish/saucepan on a baking tray in the preheated oven for 30 mins until the top is golden brown and the mixture bubbling hot.

4 Cups Almond flour
3 Eggs
2 Cups Sugar
5 Tsp Almond extract
5 Tsp Anisette liqueur
2 Dz Whole almonds or Maraschino cherries
Preheat the oven at 350F.
Mix the eggs and the sugar very well.
Add the almond extract and the Anisette liqueur and mix well.
Add the almond flour and mix.
Put the dough in a pastry bag and create the almond flowers.
Insert an almond or half of a Maraschino cherry at the center of each cookie.
Bake for 8-10 mins.
1 Lb Almonds
1/2 Lb Sugar
Zest of 2 medium lemons
3 Egg whites
1 Tbs Espresso Ground Coffee
2 Tbs Unsweetened Cocoa powder
1/2 Cup Sugar for glazing (put it in a flat plate for rolling)
50 Whole coffee beans
To prepare the paste, boil the almonds and remove the peel. Once they are cold and somewhat dry, put them in a food processor or a blender and chop them finely.
Put the chopped almonds in a bowl, add the zest of the two lemons, the sugar, the ground coffee and the cocoa powder.  Mix everything very well.
Add the egg whites and mix until the egg whites dilute the sugar and the mixture becomes a paste.
Take a lump of mixture in your hand, roll it into a ball the size slightly smaller than a golf ball.
Roll the ball completely into the sugar and place it on a baking sheet.
Slightly insert a coffee bean on top of each cookie.
Roll all your cookies and bake them for 30 mins. at 350F.
1 cup brown sugar
1 cup white granulated sugar
2 sticks butter, softened at room temperature
3 eggs, beaten
1 teaspoon vanilla
3 1/2 cups flour
2 teaspoons baking soda
2 teaspoons cream of tartar
1/4 teaspoon salt
1 package instant vanilla pudding mix (1 ounce package)
2 cups semi sweet chocolate chips
2 tablespoons half and half
1 cup semi sweet chocolate chips
Cream together the brown sugar, white sugar and butter.
Add the eggs and vanilla and stir well.
Sift together the flour, baking soda, salt, pudding and cream of tartar.
Stir into the sugar mixture.
Mix until combined.
Add the chocolate chips.
Preheat your oven to 350.
Spray a 9 x 13 pan with cooking spray.
Spread the cookie mixture evenly into the pan.
Bake the cookies at 350 for approximately 20 to 25 minutes.
Check to be sure they are done (toothpick in center) at 20 minutes, if not, put them back in for a few minutes longer.
While the bar cookies are baking, melt 1 cup semi sweet morsels in the microwave.
Stir in the half and half until the mixture is creamy.
As soon as the bars come out of the oven spread evenly over the top.Cool before cutting.
