125 g caster sugar
40 g cold butter, chopped
1/2 tsp ground ginger
1/2 tsp ground cinnamon
3 large pears, peeled, cored and cut into wedges
375 g all-butter puff pastry
Double cream, to serve
Method
Preheat oven to 200C/gas 6. Put a 21cm-diameter frying pan with an ovenproof handle on a hob over a medium heat. Add the sugar and heat to a lovely caramel colour, stirring constantly. Add the butter, ginger and cinnamon and stir to combine.
Place the pears in the caramel and spoon over the mixture. Turn the heat down and cook for 5–10 minutes, until the pears are just tender and cooked but retain their shape. Remove from the heat and cool slightly. Arrange the pears prettily in the pan.
Roll out the pastry to about 5mm thick and cut a disc slightly bigger than your pan (about 24cm). Place the pastry disc on top of the pears and caramel, then carefully tuck it snugly around the outside of the pears and down into the sides of the pan.
Bake the pie for 30–40 minutes, or until the pastry is golden brown and puffed up. Remove from the oven and leave for 10 minutes. Run a knife around the edge, place a large plate over the top and carefully turn the tart onto the plate. Serve with cream.
2 carrots, peeled
2 onions, peeled
2 cloves of garlic, peeled
2 sticks of celery, trimmed
olive oil
2 rashers of higher-welfare smoked streaky bacon
½ a bunch of fresh thyme
500 g quality beef mince
a good splash of red wine
1 gluten-free beef stock cube, preferably organic
2 x 400 g tins of plum tomatoes
sea salt
freshly ground black pepper
1 gluten-free pasta dough recipe
For the béchamel:
1 litre semi-skimmed milk
35 g unsalted butter
25 g gluten-free plain flour
25 g corn flour
70 g Parmesan cheese
1 whole nutmeg, for grating
Method
To make the Bolognese sauce, finely chop the carrots, onions, garlic and celery and add to a large, wide pan over a medium heat with a drizzle of olive oil. Roughly chop and add the bacon, then pick in the thyme leaves and cook for 5 to 10 minutes, or until softened and lightly golden.
Turn the heat up slightly, then stir in the beef mince, breaking it up with a wooden spoon. Cook for around 5 minutes, or until browned all over. Add the wine and crumble in the stock cube, stirring continuously until the liquid has completely reduced. Stir in the tomatoes and 1 tin's worth of water and bring to the boil. Reduce to a simmer, cover and cook for around 1 hour, then remove the lid and continue cooking for 30 minutes, or until thickened and reduced.
Meanwhile, preheat the oven to 180ºC/350ºF/gas 4. Make the béchamel sauce: place the milk, butter and flours in a medium pan over a low heat. Heat gently, whisking continuously for 12 to 15 minutes, or until thickened. Grate in three-quarters of the Parmesan and a good grating of nutmeg. Season to taste, then set aside.
Cut the sheets of gluten-free pasta dough into rectangles (roughly 10cm x 15cm).
Spoon one-third of the Bolognese sauce into an ovenproof dish (roughly 25cm x 30cm). Layer over one-third of the lasagne sheets and top with one-third of the béchamel sauce. Repeat with the remaining ingredients until you have three layers in total, finishing with a final layer of béchamel. Grate over the remaining Parmesan and drizzle with olive oil, then cover with tin foil. Place in the hot oven for around 20 minutes, remove the foil and continue cooking for around 30 minutes, or until golden and bubbling. Serve with a nice, crisp salad

John Torode had a turbulent upbringing. He was born in Maitland - a riverside town around 100 miles from Sydney. In 1969, the family moved to the Melbourne suburb of East Bentleigh and after ten months in their new home, John’s mother, Anne Torode, died suddenly as a result of a heart condition called viral myocarditis. She left a husband and three sons. John Torode was just four years old at the time, and was the youngest son.
His father, Douglas, travelled around looking for work, and the family had a hand-to-mouth existence. ‘My dad did lots of stuff, from orange juice factories to real estate and advertising,’ John says.
John was eventually brought up by his grandmother in Maitland. She encouraged his love of cooking. ‘She made simple food such as crumbed lamb chops and boiled potatoes and peas. Her caramel slice was legendary,’ says John.
At the age of 17 he left school and started an apprenticeship at a restaurant in the town of Beaumaris. The restaurant was described as BYO (Bring Your Own) implying that it served budget food and didn’t have a liquor license. He later moved to the more upmarket Tsindos Bistrot - an influential Italian-style restaurant, and soon after that he undertook formal chef training. ‘I did my apprenticeship through the William Anglis College in Melbourne. In Australia you work in a day job in the week and once a week you go to college and that’s where I went to college and was there for four years.’
He eventually opened his own retaurant in East Bentleigh. It was called Pasta Connection, and by the time he was 21, the restaurant had gone bust.
By his own admission he ‘wandered aimlessly’, working as a bartender in Brisbane and Surfers Paradise (the plush Queensland seaside resort), and was given the job of overseeing the catering contract for the Sydney Cricket ground. He explained: ‘It was the hardest thing I ever did. I got pneumonia twice.’
At the age of 25 he says: ‘I came to England as a stop-off on the way to Italy, where I wanted to live and to cook Italian food - but I ran out of money and I never left.’
He got a poorly-paid job in a London restaurant, and survived ‘by nicking food from the fridge at work’.
John's big break... was meeting up with Terence Conran. Soon after he started working at top restuarants owned by Conran. These included Quaglino’s, Pont de la Tour and Mezzo, where he was head chef.
In 1996 he started doing television work, and he was on ITV’s This Morning until 2000. In 1997 he co-wrote the best-selling Mezzo Cookbook and in 2000 he opened the successful Smiths of Smithfield restaurant, specialising in simple but classy meat dishes. In 2005, he started hosting MasterChef, which was a huge hit and which encouraged ordinary people to try cooking haute cuisine.
And now... MasterChef, which John co-hosts, continues to grow in popularity. It is a hit in 25 countries, spawning TV shows such as Junior MasterChef and Celebrity MasterChef, a huge number of spin-off books and regular MasterChef live shows. John Torode has written at least ten cookbooks. In 2010 he helped set up a restauant called Luxe in East London.  His love life has been eventful - he has been married twice and has four children but left his wife to go out with actress Lisa Faulkner, who he met when she won Celebrity MasterChef.

Ingredients
225g (8 oz) margarine
340g (12 oz) plain flour, sifted
225g (8 oz) caster sugar
1 teaspoon mixed spice
110g (4 oz) glace cherries, halved
110g (4 oz) mixed peel, finely chopped
225g (8 oz) raisins
225g (8 oz) currants
225g (8 oz) sultanas
110g (4 oz) blanched almonds, finely chopped
4 eggs, beaten
full fat milk, as needed
Method
Preheat the oven to 220 C / Gas 7. Line and grease a 25cm (10 in) cake tin.
Rub the margarine into the flour then add the sugar, spice, fruit and almonds. Pour the eggs into the mixture and add a little milk. Beat well so that the cake mixture should just be able to drop off a spoon, adding a little more milk if necessary. Pour the cake mixture into the prepared tin.
Bake in the middle of the oven for 1 hour, then reduce the heat to 120 C / Gas 1/2 for a further 2 hours until a skewer inserted into the centre comes out clean. Cool on a rack before decorating.

zest and juice of 1 lemon
zest and juice of 1 orange
4 tablespoons candied mixed peel
675g mixed dried fruit
40g flaked almonds
50ml brandy
50ml orange liqueur
170g butter
140g dark brown sugar
3 eggs
1 teaspoon vanilla extract
2 tablespoons treacle or golden syrup
170g plain flour
1/2 teaspoon mixed spice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 large pinch ground ginger
Method
In a bowl, combine the juices, zest, candied peel, dried fruit, almonds, half of the brandy and the liqueur and leave to soak overnight.
The next day, preheat the oven to 160 C / Gas 2/3. Grease an 18cm cake tin and line with a double layer of baking parchment.
In a mixing bowl beat together the butter and sugar until light and fluffy then add the eggs, one at a time, until well mixed. Add the vanilla extract, treacle and the soaked fruit. Sift in the flour then add the spices. Mix well. Pour into the prepared cake tin and smooth the top.
Bake in the preheated oven for 2 1/2 to 3 hours until a skewer inserted into the centre comes out clean. Remove from the oven. If serving the same day, allow to cool and serve. If making in advance, when the cake is still warm, prick with a skewer and add the remainder of the brandy. Allow to cool then wrap in fresh baking parchment. Store in an airtight container until ready for use.

Directions

In a small bowl, combine the cherries, parsley, and mustard. Spread evenly over the pork. Lay the bacon slices crosswise over the pork, overlapping them slightly and tucking the ends underneath. Roast for 45 minutes.
In a small bowl, combine the jelly and vinegar. Brush over the bacon and continue roasting until an instant-read thermometer registers 150°; F, 10 to 15 minutes more. Let rest at least 10 minutes before slicing.

Cook, stirring, until wilted, 2 to 3 minutes. Serve with the striped bass, drizzling the vinaigrette over the top.

Season the lamb with the curry powder, ¾ teaspoon salt, and ½ teaspoon pepper. Cook until browned, 2 to 3 minutes per side.
Transfer the lamb to a baking sheet and roast, 4 to 6 minutes for medium-rare.
Meanwhile, wipe out the skillet. Heat the remaining oil over medium-high heat. Add the carrots and cook, tossing frequently, until tender, 6 to 10 minutes.
Add the garlic and cook for 1 minute. Add the chickpeas, ½ teaspoon salt, and ¼ teaspoon pepper and cook, tossing occasionally, until heated through, 2 to 3 minutes.
Stir in the lemon juice and dill. Serve the vegetables with the lamb.
